Born in Gloucester, Joe started his footballing career playing for FC Highnam - a girls and boys junior football club based in the village of Highnam close to Gloucester. He was scouted by Bristol City and joined their academy set-up, where he turned professional in 2009. After spending a ten game loan spell with Bath City during the 2010-11 season, he made his professional first team debut with Bristol City in February 2011 in a Championship match against Preston North End at Deepdale.
Joe's Bristol City first team career failed to significantly take off, making just four appearances for the Robins, whilst he took in a 13 game loan spell with Stockport County during 2011-12. Later that season, he joined Yeovil Town on loan, making his debut in a January 2012 home match against Tranmere Rovers. He made an instant impact, scoring 19 minutes into his Glovers career in what was Gary Johnson's first proper match in his second spell at the club.
Edwards' first loan spell only lasted four matches, with an injury in the final match of his one month loan deal having scuppered any chance of an extension. It wasn't until September 2012 that he returned - once again as part of a short term loan deal, but on this occasion the agreement was rolled forward for 17 matches, until Football League rules forced him to return to Ashton Gate. During that time, he began to be moulded more as a central midfielder, having spent his Bristol City days and his first loan spell for the club operating as a right-back, or by playing further up that flank.
On January 17th 2013, Joe returned for a third spell, and this time it was on a permanent basis, signing an 18 month contract with the club for an undisclosed fee. By now a regular central midfielder, he was part of the club's squad that secured promotion to the Championship, via the League One play-off final at Wembley Stadium, and in August 2013, he committed to an additional year's extension on his contract that would tie him to the club until June 2015.
Joe was an ever-present member of the team during the club's 2013-14 Championship season, and would ultimately play in 77 consecutive matches for the Glovers across that period and the adjoining seasons. His performances at Championship level earned him two 2013-14 End of Season Awards from the Western Gazette and the Community Sports Trust. He was made club captain for the start of the 2014-15 season, and made his 100th appearance for the club during the September 2014 away match against Bradford City.
